GAPS Intro, Stage 4, Day 60 -- Bread!

We made bread today and it came out wonderfully! I was pleasantly surprised and how 'bread-like' it was. I expected something much more dense and bitter or sour. This was delicious and satisfying. Find the recipe here.

First thing in the morning: RO water with added trace minerals and a squeeze of lemon. Probiotic supplements -- kids, 1 full cap, me 1 full cap (with intentions of taking another full cap before bed).

Juice: 70% carrot, 30% celery diluted by half with water. Yum. Kids don't 'chew' and I'm not sure how to remedy this! Also -- the carrot juice can kind of tickle our throats. Is that odd?

Breakfast: Eggs scrambled in ghee -- Dad made them! Vegetable soup (butternut, pattypan, leeks, fennel, onion) which wasn't very sweet and almost tasted like cream of potato soup. Yogurt -- 1/2 cup each.

Lunch: Sausage stew (sausage, carrot, onion, peppers, yellow squash, beef stock). Thin slice of bread with plenty of ghee. Fermented asparagus pickles.

Dinner: Spaghetti squash with pesto and little meatballs.

    Our water is filtered with a reverse osmosis system and is essentially stripped of minerals (and chlorine, and fluoride, and other nasties) when it comes out of the faucet. Because of this, it's important to add minerals back into the water or else long term drinking of the RO water will strip minerals from our bodies. We use Concentrace trace mineral drops. It's actually pretty amazing to 'taste test' RO water and then RO water with the drops. The added trace minerals make it taste like true spring water--it's so good, you end up drinking a lot more of it!
